OCHO Coconut Lemon Bars

  • 1 ½ cup flour
  • 1/3 cup sugar
  • 2/3 cup butter
  • Zest from one lemon


  • 4 OCHO Candy Coconut Bars, chopped
  • ¼ cup lemon juice, fresh
  • 3 eggs
  • ½ cup sugar
  • ½ teaspoon baking powder
  • Zest from one lemon


  • 1 cup sweetened coconut flakes or shavings



  1. Preheat oven to 350°F and line an 8” square baking pan with parchment paper
  2. In a food processor pulse all crust ingredients together until crumbly.
  3. Press crust into bottom of prepared pan and bake 20-25 minutes until edges are golden.
  4. Remove crust from oven and let cool for about 10 minutes.
  5. In a large mixing bowl heat chopped OCHO candy in microwave at 20 second intervals until chocolate is melted.
  6. To melted OCHO, add lemon juice and stir until combined and coconut fillings have been loosened.
  7. Add remaining filling ingredients and beat together at low speed until well combined.
  8. Pour filling over cooled crust and bake 15 minutes.
  9. Sprinkle coconut on top of partially baked bars and return to oven to bake another 15-20 minutes until filling is set (and only loosely jiggles in the center).
  10. Let cool then cut into 9 or 16 squares, cleaning knife between each cut to get a clean edge.
