Double Chocolate OCHO Peppermint Stuffed Cookies

The holiday season calls for warm sweaters, twinkling lights and plenty of chocolate! In need of a new cookie recipe to add to your collection of old classics this winter? Our OCHO Peppermint Minis – with their creamy mint center covered in delicious, fair trade dark chocolate – are the star of these Double Chocolate OCHO Peppermint Stuffed Cookies. They are so tasty that Santa might just come back down the chimney for a second serving! A hearty shout-out to FoodStirs for the recipe!



1. Preheat oven to 350 F. Spray a 8×8 baking pan with nonstick spray, line with parchment paper and set aside. Whisk eggs and oil in a medium bowl and mix until well-blended. Add Foodstirs Organic Brownie mix and stir until a thick batter forms.

2. Begin rolling the thick brownie batter into large balls and press an OCHO Peppermint Mini in the center and roll until a cookie dough ball forms. Place cookies on a parchment-lined baking tray, spaced about 2″ apart.

3. Bake for about 20 minutes or until the top of the cookies crackle. Allow cookies to cool for about 5 minutes. Enjoy!
